Mimosa With a Twist


I love a good mimosa. It’s like society’s gift to allow you to enjoy an alcoholic beverage in the morning without judgement. So I indulged and enjoyed this freshened up version. I had some left over granita from this recipe I shared last week. It was a no brainer to incorporate this into a fancified mimosa. Since the weather was significantly hotter over the weekend, it was the perfect pairing for my breakfast.


I love how the frozen granita breaks up and give it a nice icy texture. The granita is on the sweeter side as well, so it gives the drink a nice sweetness without being too over the top sugary. Bonus for your morning consumption!  Especially when eaten with these lightened up muffins coming your way tomorrow.

To make the mimosa, just spoon about 3-4 spoonfuls of the granita into your glass. Note, this depends on the glass size, these are on the smaller side, use more granita if making yours in a larger glass. Add orange juice to fill the glass and garnish with a strawberry for a bit of flare. Enjoy!

Rosé Strawberry Granita

#roséallday. It’s a thing, and totally appropriate since it’s Thursday, which means it’s almost Friday, which means it’s almost the weekend. So why not celebrate and be a little fancy and enjoy some rosé. Arm twisted yet? If not, then I think I might have something to change that. If you enjoy a little bubbly and are also in search of a fun summer dessert, look no further. I made this rosé granita a few weeks back and MY GOD it is delicious. I was looking through The Perfect Scoop and came across a champagne granite recipe. I immediately though this is happening…..with rosé. While I was making this I figured, why not go above and beyond and add a little strawberry syrup that I had left. The result was phenomenal. I added a few diced strawberries when I tested it and no surprise, it was great. I had my husband test it which he hesitantly agreed to do. He was pleasantly surprised, and questioned why I hadn’t shared its existence earlier. I mean why would I want to share it? I felt entitled to keeping this delicious dessert secret. But, the cat is out of the bag now. What I love about this recipe is the simplicity in making it. It requires no special equipment, just a bit of time. I will admit, the directions advise that you stir it up every 30 minutes or so after the first hour, to create the little crystals. Full disclosure, when I  made this, I popped it in the freezer and then gave my son a bath, got him ready for bed, snuggled……and completely forgot I had it in the freezer. It wasn’t until the next morning when I opened the freezer and though oh sh!t, I didn’t stir this! So, I took it out and started to shave a bit with a fork. It was perfectly fine. So really it’s a low fuss and super tasty treat.




  1. In a saucepan, heat the sugar and water. Whisk together and heat until the sugar is completely dissolved.
  2. Remove the saucepan from the heat and add in the rosé. Stir in the strawberry syrup. Place mixture in a freezer safe shallow container.
  3. Place the mixture in the freezer for an hour. Once the mixture begins to freeze, take a fork and rake the frozen parts near the edges to the middle. Check the mixture every 30 minutes after that, repeating the process until it's completely frozen.

Mexican Rice


It’s Cinco de Mayo a day to enjoy all the yummy eats and drink some tequila. Actually it’s only about 6AM here so no tequila for me yet. Maybe a tequila sunrise would be appropriate? In all honestly, I saw a post from a fellow blogger, How Sweet Eats for Rose Sangria, and I just happen to have some Rose, so that will most certainly be happening this evening. Anyway, back to this rice. I dare to be different today and post a side dish rather than taco inspiration. Don’t get me wrong I LOVE tacos! So much, actually, that I’ve researched apparel ad nauseam to express my affections. But this rice dish caught my eye a while ago. I was focused on my health for a bit and got completely distracted by potato chips and Easter Candy, but I didn’t forget and I’m trying to regain focus. If you are trying to stay healthy, or eat something a bit lighter, just like me, you are going to enjoy this dish. It uses brown rice and fresh veggies so it’s super healthy, and super flavorful. I had it as a side, but brought left overs for lunch because it’s that good and satisfying. If you want to limit your taco intake or perhaps have a side dish to enjoy, try this dish.



  1. Prepare the rice according to the package directions.
  2. In a pan, heat a bit of olive oil about 1-2 tsp. Add in the onion, jalapeno and tomatoes. Cook about 8-10 minutes. Add in the garlic and cook about a minute more. Add in the tomato paste and spices and heat through. Add in the cooked rice, salt and pepper, and mix together. Serve warm.
