Easy Homemade Irish Cream


A short time ago, a friend, colleague, and fellow Smitten Kitchen lover asked me if I had seen the recipe for Irish Cream. My first thought was “What the heck….no I didn’t”. My second thought was “I want”, so I made. Sure, it’s super easy to head to the store and pick up a bottle already made, but why would you do that now that you have been gifted this easy homemade version. You wouldn’t. It’s incredible. It’s perfect. And it’s these things not only because it’s homemade, but you get to control the recipe. I made this as is and it’s great, but if you want to lessen the alcohol, add less. If you want it sweeter, add more. If you want to add spices, or a hint of coffee……DO IT! I had this over ice (pictured here) and it was the perfect late afternoon drink. My own personal Happy Hour. Me, my back yard, a summer breeze and you’re thinking and Irish Cream?….yup! It’s also inspired me to turn it into a boozy dessert *recipe coming soon!* My sister and I were dreaming up ways to make it more delicious. So check back for more ideas using this homemade deliciousness. But back to the process. Easy. Mix the stuff together. That’s it! Literally mix and you are ready to go.



  1. In the bottom of a pitcher (or in a separate bowl, likely way easier to start) whisk the cocoa powder and a spoonful of heavy cream into a paste. Continue adding splashes of cream while whisking until you have a smooth paste and can easily add the remaining cream in bigger splashes. Once all of the cream has been incorporated, add in the vanilla, sweetened condensed milk, and whisky. Keep refrigerated. Can last for about 2 weeks to one month.

Mimosa With a Twist


I love a good mimosa. It’s like society’s gift to allow you to enjoy an alcoholic beverage in the morning without judgement. So I indulged and enjoyed this freshened up version. I had some left over granita from this recipe I shared last week. It was a no brainer to incorporate this into a fancified mimosa. Since the weather was significantly hotter over the weekend, it was the perfect pairing for my breakfast.


I love how the frozen granita breaks up and give it a nice icy texture. The granita is on the sweeter side as well, so it gives the drink a nice sweetness without being too over the top sugary. Bonus for your morning consumption!  Especially when eaten with these lightened up muffins coming your way tomorrow.

To make the mimosa, just spoon about 3-4 spoonfuls of the granita into your glass. Note, this depends on the glass size, these are on the smaller side, use more granita if making yours in a larger glass. Add orange juice to fill the glass and garnish with a strawberry for a bit of flare. Enjoy!

Watermelon Margarita


Margaritas and Mondays. Sounds like it could be a song. Maybe it is? I’ll look it up later because I need to share these margaritas with you. We had a rather exciting long weekend this weekend. With the arrival of our new pup and getting adjusted here, it’s been a bit overwhelming, so I thought the perfect way to wind down would be a margarita. Specifically a watermelon margarita. When we bought our blender, it came with some great recipes, one being watermelon juice. Since this trendy beverage has hit the scene it’s all I hear about, so I decided to jump in and make something yummy with it. It’s supposed to have some serious health benefits, so really, what could be better than a healthy margarita? It’s simple, not a lot of ingredients. So basic, yet so tasty. I love how the lime dulls the sweetness, yet the sweetness balances out the tequila. It’s a great combination of flavors. I opted for a sugared rim, though I think a salted rim would be quite good here. The drink itself is very refreshing. It’s so good I have another idea planned for this for the summer months!


  1. In your blender, combine watermelon, ice, agave, and lime juice. Blend until smooth and juice like consistency.
  2. Line two glasses with sugar (or salt) mixture. To do this, rub a slice of lime around the rim and then roll the top into the sugar mixture until covered. Add ice to each glass. Pour about 1 ounce, of more if you prefer a stronger margarita, into each glass. Divide the watermelon juice between each glass. Garnish with additional lime slices if you like.


Affogato My Way

I love coffee. So to me, an affogato is such a special treat. I love the sweetness of the ice cream and the richness of the coffee. I tried this version two ways. The first version I added shaved chocolate. The second version, I added shaved chocolate and some crushed pecans. I think my preference is without pecans, which is the version pictured here. Baileys would also be a nice addition here. Just add in a couple tbsp.’s of the liquor with the coffee and I’m sure it would be delightful. Full disclosure, I’ve added just Baileys to ice cream before and let me tell you. It’s the best adult dessert ever. So I’m sure it would pair very nicely here. While I used vanilla ice cream for this version, I would also recommend getting creative and using some flavored ice cream. I made a cinnamon ice cream earlier this year, that I think would be divine. Because this is an affogato my way, I opted for my standard brewed coffee rather than espresso which is typical.


For the affogato:

3 scoops vanilla ice cream
3 tbsp. coffee
shaved chocolate

Place the ice cream in a glass. Top with 3 tbsp. of the brewed coffee. Top with shaved chocolate and enjoy!

Smoothie Four Ways


The warm weather has finally arrived in New England, despite the SNOW that some areas saw about a week ago. Thankfully, not here. But back to the warm weather. This time of year makes me crave lighter foods. Something more refreshing. Smoothies are such a great way to get a lot of nutrients and stay hydrated in the warm weather. My son and I love them as a mid-morning snack, or is some cases a pre-daycare treat during the week. While we usually default to this smoothie recipe I personally like to change it up a bit. The base for all of these smoothies is the same. 1 banana and almond milk. Vanilla flavored to be exact. While it’s sweetened, it’s still healthy and helps to sweeten the smoothies a bit. The other key is to use very rips bananas. Not ripe like banana bread ripe, but almost. I’m including the individual recipes for each below. This Cherry Jubilee Smoothie is like the dessert minus the heat and booze. Start with 1 banana and 1/2 cup of Almond milk. Add in cherries, about a 1/2 cup (handful if you are like me!) and about 1/4 cup of orange juice. Add in 1/4-1/2 cup of ice and blend together.











This Very Berry Smoothie is exactly as it sounds. Full-o-berries! Such a great way to get those antioxidants. Start with 1 banana, 1/2 cup Almond milk. Add in some strawberries, blueberries and raspberries. Add about 1/2 cup of ice and blend together.










This Green Health Smoothie is a great way to get in your greens and it SUPER healthy. Start with 1 banana, 1/2 cup of almond milk. Toss in about a handful of baby spinach and a kiwi. Add your ice, about 1/2 cup and blend together. I feel healthier just looking at it!









A spin off of a classic. Such a treat! For this you start with 1 Banana and 1/2 cup Almond milk. Toss in some strawberries, I also used about a tbsp. of this strawberry syrup. Add in about 1 spoonful of peanut butter and 1/2 cup of ice. Blend together and enjoy!
